Cranberry-Orange Loaf, from Coming Home with Gooseberry Patch

2 cups all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon orange zest
2 eggs, beaten
1/2 cup milk
1/2 cup butter, melted
3/4 cup cranberries, coarsely chopped
3/4 cup chopped walnuts, toasted
1/2 cup dried apricots, chopped

In a large bowl, stir together flour, sugar, baking powder, salt and zest. Make a well in the center; set aside. In a medium bowl, stir together eggs, milk and butter; add to flour mixture. Stir just until moistened; fold in cranberries, nuts and apricots. Spread in an 8"x4" loaf pan that has been greased on bottom and 1/2 inch up sides. Bake at 350 degrees for 65 to 70 minutes, until a toothpick tests clean. Cover with aluminum foil during last 20 minutes of baking time. Cool in pan on a wire rack for 10 minutes; invert onto rack and cool completely. Makes one loaf.

Would make this again.
Love this! I substituted pecans for the walnuts, and it turned out perfectly. I'm making these for my son's teachers at school. Yum! five stars
