Almond Cookie Strips

1 cup butter, softened
1 cup sugar
1 egg yolk
1 teaspoon vanilla
1/4 teaspoon almond extract
1/8 teaspoon salt
2 cups flour
1 egg white
2 tablespoons sugar
1/4 teaspoon ground cinnamon
1/2 cup finely chopped almonds

Preheat oven to 350 F. Beat together butter and 1 cup sugar until light and fluffy. Stir in egg yolk, vanilla, almond extract and salt. Stir in flour and mix well. Pat into a 15-1/2-inch by 10- 1/2-inch baking pan. Beat egg white till stiff, then beat in 2 tablespoons sugar and cinnamon. Fold in almonds and spread over base. Bake for 25 to 30 minutes. Remove from oven and let cool 10 minutes. Cut into bars while still warm.

Would make this again - definitely! Very good, but I agree with with Valeria about using 2 egg whites. These will be a new Christmas tradition! My husband can't keep his hands off of them. five stars

Very good but i think I would maybe use two egg whites for the top part next time, there wasn't really enough to properly spread across the top. I thought it was easier to put the base into the pan with my hands, maybe a little messier but it worked quite effectively. five stars

Excellant recipes that I will definately use again. Everyone that tried them loved them. I made two batches, one as the recipe reads and in the other I added more almond flavoring and less cinnamon to the glaze topping. five stars
