Whipped Shortbread

1 pound butter
1 cup powdered sugar
1 teaspoon vanilla
pinch salt
1/2 cup cornstarch
3 cups all-purpose flour

Preheat oven to 350 F. Cream together butter, icing sugar, vanilla and salt. Gradually add cornstarch and flour. Whip with an electric mixer until fluffy. Place into a cookie press and press out cookies on cool baking sheet. Decorate with candied cherries or dragees if desired. Bake 12-15 minutes. Let cool for 2 minutes on baking sheet, then remove to wire rack to cool completely. Store in an airtight container at room temperature.

I am not a baker as my baking usually is hit and miss, but I have been making these light, fluffy, melt-in-your mouth cookies for 15 years. They turn out perfectly every time and are a cinch to make! Everyone loves them! five stars

I have never had any luck with my cookie press. I tried this recipe and decided its a keeper. Love the taste and it was super easy to make. Fun for my 9 year old to press too. If it doesn't turn out well, check your ingredients for freshness. Its a good one. five stars

Would definately make this again. I halved the recipe and it still turned out really well.
The trick is to not over mix the dough and it results in a light cookie. I dipped one edge of the cookies in melted dark chocolate as a finishing touch and it really enhanced them as well. five stars

These cookies were amazing!! I made them last night and was amazed at how such a simple recipe could yeild such wonderful cookies. I've tried other spritz recipes and this is by far the BEST one! I will admit that having a kitchen aid pro mixer really helped. I am making another batch tonight to give out at work tomorrow. :) five stars
