Whipped Shortbread

1 pound butter
1 cup powdered sugar
1 teaspoon vanilla
pinch salt
1/2 cup cornstarch
3 cups all-purpose flour

Preheat oven to 350 F. Cream together butter, icing sugar, vanilla and salt. Gradually add cornstarch and flour. Whip with an electric mixer until fluffy. Place into a cookie press and press out cookies on cool baking sheet. Decorate with candied cherries or dragees if desired. Bake 12-15 minutes. Let cool for 2 minutes on baking sheet, then remove to wire rack to cool completely. Store in an airtight container at room temperature.

These are excellent shortbread cookies! I will definitely make them again. I sprinkled cane sugar on the tops before I baked them and they came out even more delicious than those tasty butter cookies that come in a blue tin. five stars

Lost a good whipped shortbread recipe years ago and couldn't find a good one until now. Just made them and they turned out excellent! Easy recipe. Not sure why anyone would have a problem with this recipe? The cookie dough consistency is perfect and was able to used a cookie press without any problems. They turned out perfectly. The only thing I had to do was adjust the time on this recipe to 10 minutes because of my gas stove. The cookies baked to perfection and taste delicious. Definitely a big hit!! five stars

These cookies are so good. They melt in your mouth, very light. I put food coloring in the dough and also sprinkled them with colored sugar. Cute little cookies, and very easy to make. five stars

I'm not a particular fan of the Christmas Cookie, so when I saw this recipe, I knew it was for me. I took some to church two weeks back, and three different people went out of their way to stop me and tell me this was the best Christmas cookie s/he ever had. Wonderful cookie, and now 'my' cookie!!!! (Yes, they are delicate, but who cares when they are soooooo good!) five stars

I don't understand either why people are having problems with this recipe either.

I followed it point for point lastnight and ther cookies turned out delicious! My family even compared them to the ones my grandma use to make which is a HUGE compliment. will definetly have to make these for Christmas. five stars

I'm not exactly sure why some people seem to have had a problem with these. I just finished making these, along with some other cookies. I find this is the lightest, easiest lovely shortbread recipe. I dipped half of each cookie in melted dark chocolate too...just to dress them up a bit, they surely were yummy on their own though. A definite keeper in our house for the holidays. five stars

I made these cookies several times and they never fell apart.I store them in cans on top of each other and they are fine.I gave them to co-workers and they request then every year.The best cookie press recipe ever. five stars

A near Miss. I suspect the recipe calls for too much butter. They were SO whipped that they were difficult to handle without breaking.

They tasted great, but Christmas cookies are for sharing, and these would turn to buttery dust before they arrived at their destination.
