These cookies are made with a special galette iron. If you don't have one, try a pizzelle iron. One reader tells us that even a waffle iron works fine. You can also occasionally find them on eBay.
1 lb butter, melted
6 eggs
2 cups sugar
2 cups brown sugar
1 teaspoon vanilla or rum flavoring
1 teaspoon baking powder
6 cups flour
Sift flour and baking powder and mix in rest of ingredients. Chill dough. Drop spoonfuls on a pre-heated iron. Hold over hot stove and bake on each side for 2-1/2 to 3 minutes.

My Granmother and Grandfather are from Belgium France and she used to make these all the time. After they both died I lost track of who inherited the iron.I would love to have another one, if you are interested in selling the iron I would be most interested in buying it.email is mypye@yahoo.com

I have had a Galette Iron in the kitchen for 28 years and never bothered to look for a recipe on-line. My wife's family introduced Galettes to me as a teen back in WV. I remember they spent nearly a day making them at Christmas, part of the ritual of the Christmas Season. I'll be making the this year!

as an aside on this recipe - we made these on a gas stove and altho labor intensive, worth every moment
if you make them the right size - Pringles cans make great storage containers and if you decorate them, gift packages.
as of this posting there is a great iron for sale on ebay (not mine I swear) under pizelle cooker

This is the first site I have seen that gives the recipe for the Italian cookies. This is my favorite Christmas cookie of all time and I am glad to see that others know it and love it. My mom makes 5 dozen on her homemade galette iron that heats on the gas stove burner and makes 2 (yes 2) at a time. But even she thinks it is worth the 3 hours!

My grandmother use to make these cookies every christmas. My mother and I continue the tradition to this very day. I am going to be moving in a few months and have yet to find a galette iron of my own. Does anyone have a galette iron they are willing to sale? Or know where i can find a Belgi galette iron? I highly reccomend these cookies for everyone. Also, for and extra sweet and pretty accent, try dipping half the cookie in chocolate. mmmm

My Grandmother made these cookies for me when I was a little girl. (I called them waffle cookies) On a request to her for cookies, she bought me an iron, she lived in Kansas, and sent it to me along with the recipe and said, "Make them yourself." You quickly learn why you are only make them at special times of the year. I have made these cookies for family and friends for over 35 years. I realize what a treasure it is to have a Belgi Galette Iron!!!

My Dad has been making galettes for as long as I can remember. He makes them twice a year - Thanksgiving and Christmas. The holidays wouldn't be complete without galettes being a part of them. Now I have children of my own, and they love this tradition also. In fact, my father gave my brothers and me each an iron of our own, to continue on with this tradition.
