Pepperkakor

Rolled Swedish ginger cookies. Also known as Pepparnotter in Sweden, Pebernodder in Denmark, and Pepperkaker in Norway.

4 cups all-purpose flour
1 1/3 cups sugar
1/4 cup corn syrup
1/3 cup water
7/8 cup butter
1 tablespoon orange zest -- grated
1 tablespoon cinnamon
1/2 tablespoon ginger
1/2 tablespoon ground cloves
2 teaspoons ground cardamom
2 teaspoons baking soda

Boil sugar, syrup, and water in a small saucepan. Put the butter and spices in a large mixing bowl. Pour in the hot sugar mixture. Stir until butter has melted. Cool. Stir together baking soda and flour. Mix all ingredients toether to make a smooth dough. Cover and let stand overnight. Roll out one portion of the dough at a time, with a light touch. Cut out shapes from the dough with cookie cutters. Place the cookies on cold, greased cookie sheets. Bake the cookies at 400F for 5-8 minutes in the center of the oven. Check often, as they burn easily.

Would make this again.
Mmm, pepperkakor, perfect for curing my swedish home-sickness! Yumm! It's not possible to score any lower, definatly a 5! five stars

Would make this again.
Great recipe. The additon of cardamon and orange peel is a twist on what I remember from my Swedish youth. It is reminiscent of traditonal limpa bread, a Christmas favorite. five stars

Would not make this again.
These cookies were very interesting. Pay close attention to the directions, for they do burn easily (mine did). The not-so-burned cookies we flavorful, but not a favorite of mine. three stars
