Pumpkin Spritz

1 cup butter, softened
1/2 cup granulated sugar
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/3 cup canned pumpkin
1 large egg
1 teaspoon vanilla
2-3/4 cups all-purpose flour
3/4 teaspoon baking powder
additional ground nutmeg

Pre-heat oven to 400 F. In a large mixing bowl beat butter until creamy; beat in sugar and spices until well combined. Mix in pumpkin, egg and vanilla until well combined. In a separate bowl, stir together flour and baking powder. Stir flour mixture into butter mixture until well combined. Place into a cookie press and press out shapes onto an ungreased baking sheet (for best results use a silver-colored baking sheet, not the kind with a non-stick surface). Lightly sprinkle cookies with additional nutmeg. Bake 6 to 8 minutes or until set but not browned. Allow to cool 2 minutes on baking sheet then remove to wire racks to cool completely.

Would make this again.
i love making press cookies these are the best ones ive found. when i was a kid my mom always had me using jello in my press cookies i never cared for them! five stars

Would not make this again.
These cookies were bland and the dough was diffcult to use with the press. If I were to make this again, I would not use the cookie press and I would add 1 tsp pumpkin pie spice. And the cream cheese frosting would be a delightful addition. one star

Would not make this again.
I was really disappointed. At room temperature, the dough would not stick to the recommended baking sheet when I tried to get it out of the press. After trying a baking stone, a silicone cookie sheet and a non stick sheet, I finally gave up on the press and flattened rolled balls instead. They came out tasting like paste. No flavor at all. I won't be making this one again. one star

Would not make this again.
These were ok. The cookies remain soft and they are bland. My family loves pumpkin anything but they did not like these. I would try sandwiching them with cream cheese frosting and they might be better. two stars

Would make these again, they are a snap to make - but increase spices. I sprinkled with cinnamon sugar. Use dough at room temperature, cold dough doesn't work well in a cookie press. Love the Wilton Cookie Pro! four stars

Would make this again.
This recipe was OK. The dough didn't come out of the press very well, even after chilling. The cookies were a little bland, we thought. I made up a quick batch of confectioners' sugar frosting to drizzle over them, and everyone (in my family) agreed that they were much better that way. A cream cheese frosting would've been good, also - something to jazz them up a bit. three stars
